This soup, with its creamy texture and the distinctive taste of Stilton cheese, is a testament to Ramsay's ability to elevate humble ingredients into a gourmet experience. Ingredients

  • 1 tablespoon olive oil
  • 1 onion chopped
  • 1 stick of celery chopped
  • 1 leek cleaned and chopped
  • 1 medium potato diced
  • 1 knob of butter
  • 1 liter of chicken or vegetable stock
  • 1 large head of broccoli roughly chopped
  • 140 g of Stilton or another blue cheese, crumbled
  • Salt and pepper to taste

Instructions

  • Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the onion, celery, leek, and potato, along with a knob of butter. Sauté until softened but not browned, about 5 minutes.
  • Add the Stock: Pour in the stock and bring to a boil. Once boiling, lower the heat to simmer and cook until the potato is tender, about 10-15 minutes.
  • Cook the Broccoli: Add the broccoli to the pot and cook until just tender but still bright green, about 5 minutes. Avoid overcooking to maintain the vibrant color and nutrients of the broccoli.
  • Blend the Soup: Remove the pot from the heat. Using an immersion blender, blend the soup until smooth. If you don't have an immersion blender, carefully transfer the soup to a blender in batches and blend until smooth.
  • Add the Cheese: Return the blended soup to a gentle heat and stir in the crumbled Stilton cheese until melted and well combined. Season with salt and pepper to taste.

Notes

Ladle the soup into warmed bowls and garnish with a little extra crumbled Stilton cheese and a few small broccoli florets if you like. Serve with a side of crusty bread or garlic croutons for dipping.
