Ingredients

  • - 2 tablespoons olive oil
  • - 2 cups chopped yellow onions 2 onions

  • - 4 cloves garlic minced
  • - 2 tablespoons chili powder
  • - 2 teaspoons ground cumin
  • - 2 teaspoons dried oregano
  • - 2 teaspoons kosher salt

  • - 1/4 teaspoon crushed red pepper flakes
  • - 1 4-ounce can tomato paste
  • - 1 28-ounce can diced tomatoes, undrained
  • - 1/4 cup minced fresh basil leaves
  • - 2 15-ounce cans red kidney beans, drained and rinsed
  • - 2 cups beef broth

Instructions

  • Cook the Onions: Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onions and cook until they are translucent, about 10 minutes.
  • Brown the Beef: Add the ground beef to the pot and cook until the beef is no longer pink. Break it up with a spoon as it cooks.
  • Add Garlic and Spices: Stir in the garlic, chili powder, cumin, oregano, salt, pepper, and red pepper flakes. Cook for 1 minute.
  • Mix in Tomato Paste and Tomatoes: Add the tomato paste and cook for another minute, stirring well. Then add the diced tomatoes, basil, kidney beans, and beef broth.
  • Simmer: Bring the chili to a boil, then reduce the heat and simmer, uncovered, for at least 30 minutes, stirring occasionally. The chili will thicken as it simmers.

Notes

Serve the chili hot in bowls, garnished with your choice of toppings such as sour cream, shredded cheese, chopped onions, or avocado. Accompany with cornbread or over rice for a complete meal.
